A breakfast idea

So this isn't a lunch idea but it is a big time saver and was just really useful this morning at our house.

I'm not much of an egg eater but for those of you who like (or whose kids like) an egg muffin sandwich, you can make them incredibly quickly. We break an egg into a coffee mug, whisk it with a fork, add a small splash of milk and pop it in the microwave. Our old not very powerful microwave takes about 50 seconds but a more powerful one should take around 30 sec. About 10 sec before its done, we drop a few slices of cheese on top and it melts while the egg finishes cooking. It's all done in less time than it takes you to toast the english muffin.
